What you need for a banana bread:
– 50 g of banana chips
– 250 g spelled flour
– 200 ml almond milk
– 125g brown sugar
– ½ pack of baking powder
– 4 tbsp coconut oil (melted)
– 2 tsp cinnamon (optional)
– 75g walnuts (optional)
– a box shape
Preparation:
- Put the banana chips and 200 ml of the almond milk in a bowl and let them soak for about 2 hours until they are nice and mushy.
- Preheat the oven to 180°C fan oven.
- Mash the banana chips in the almond milk with a fork until a paste forms.
- Put the flour, brown sugar, baking powder and cinnamon in a bowl.
- Melt the coconut oil over low heat.
- Add the mashed bananas, melted coconut oil and the rest of the almond milk to the dry ingredients and mix into a smooth batter. If the dough is still a bit tough, add 1-2 tablespoons of almond milk.
- Grease the mold with some butter or use the remaining coconut oil from the bowl it was melted in. Then pour the batter into a bread pan.
- Bake the bread for 30-35 minutes.
- Allow the bread to cool slightly before removing from the pan.
